No. Polish citizens do not need a visitor visa for Canada; flying requires only an Electronic Travel Authorization. The exception that catches Polish travellers more than most is dual citizenship: if you also hold Canadian citizenship, Canada requires you to travel on a Canadian passport, and an eTA attached to the Polish one will not carry you.

The eTA, and the case where it cannot help you
For a Polish passport with no Canadian citizenship attached, this is a short process. Apply for the eTA online before flying. It is tied electronically to the passport you applied with, so a renewed passport means a new eTA, and travelling by land or sea does not require one at all.
For a dual Polish-Canadian citizen the eTA is the wrong instrument entirely. Canada requires dual Canadian citizens to travel with a valid Canadian passport, and the airline checks that at the gate rather than the border. Applying for an eTA on the Polish passport does not create an alternative route; it produces an authorization that does not answer the question being asked.
Plan the round trip as two separate questions with two separate answers, because a dual national needs both documents rather than a preferred one. Canada requires its own citizens to arrive on a Canadian passport. Poland, under article 3 of its Citizenship Act, treats a citizen who also holds another nationality as having exactly the same rights and duties as someone holding Polish citizenship alone, and does not allow that other nationality to be invoked with legal effect before Polish authorities. Neither passport substitutes for the other.

- The method of arrival changes the requirement, and this is worth knowing for anyone driving up from the United States. The eTA applies to air travel. Arriving by car, bus, train or boat does not require one, so the same Polish traveller on the same trip may need an authorization for the flight out and nothing at all for a land crossing on the way back.
- Poland does not recognise your other passport as changing anything, and that is written into statute rather than left to practice. Article 3 of the Citizenship Act of 2 April 2009 provides that a Polish citizen who simultaneously holds the citizenship of another state has the same rights and duties towards Poland as a person holding Polish citizenship exclusively, and that such a citizen may not invoke the other citizenship with legal effect before Polish authorities. The practical reading is that presenting a Canadian passport to Poland does not make you a visiting Canadian, so a dual national travels with both books: the Canadian one because Canada requires it, the Polish one because Poland will deal with you as Polish regardless.
